Cauliflower soup with porcini oil

Is there something good enough in a simple cauliflower soup to tell abut it? Is this soup even worth posting? Well, I admit the cauliflower soup isn’t a great, world-shaking recipe. It’s rather simple and delicate, but the porcini oil completely changes the perspective.

Soup itself is quite watery and delicate, but the porcini oil in a subtle way emphasize this features. Something in this dish make it nostalgic. In taste, colour, aroma and presentation. It hits me when I chose only while elements to make photos, plus just few random flower I brought from a walk. Adding this specific winter light, somehow it all get quite melancholic, sleepy and calm.
I started to wonder why this soup creates such a climate. Maybe because the taste of cauliflower soup reminds me of childhood, as well as porcini brings memories of walks in the forest.  But maybe it’s just this grey weather and short days. And maybe this unaffected simplicity and delicacy of the soup creates this nostalgic feeling.
Due to porcini mushrooms and whole nostalgic thing, this soup seems to be perfect Christmas dish. The one you want to share with people you love.

Cauliflower soup
with porcini oil

Ingredients:
5 porcji

2 tbsp olive oil
1 medium onion
1 cauliflower
1 liter vegetable broth
2-3 cups water
1 cup vegan buttermilk*
salt
pepper

Porcini oilve:
1/3 cup olive oil
8g dried porcini mushrooms

* to make vegan buttermilk add 1 tbsp red vinegar and fill up to the top of a cup with soy milk, set aside for few minutes

Cauliflower soup:

Divide a whole cauliflower into small pieces. Chop onion. In a large pot heat the olive oil. Add cauliflower and onion. Cook for 2-3 minutes. Add broth an 2-3 cups water (depending on size of cauliflower). Cook fo 10-12 minutes until cauliflower is soft. Remove from the heat and blend it. Add buttermilk. Season with salt and pepper.

 

Porcini oil:

In a small pot, on a low heat, cook the olive oil with porcini mushrooms for about 5-6 minutes. Discard porcinis. Pour prepared olive on the soup on plates.
