Funny, how our taste and culinary favourite change through our life. As a child I truly hated olives, I had no clue what capers are, and thought the only way of eating sesame is in this sticky, incredibly sweet cookies. Today I cannot imagine there is no olives in my fridge, I adore capers and add tahini in almost every dish.
Same thing happened with milky breakfast. I’m one of those people who hate smell and taste of cows milk. So I didn’t get the idea of eating milk with cereals every morning. Cornflakes or those round-shaped chocolate things weren’t tasty for me at all. And combing them with milk- disgusting!
I was also skeptic about granolas. I found them better than cornflakes, but usually they were to sweet for me. Sugar and dried bananas are not my favourite things, especially in the morning. So, when I was about 12 years old, I decided to end my relationship with all those milky breakfasts. Forever!
Even when I discovered that milk made of soy or almonds are pretty tasty, I still refused to eat granola! Fortunately one day I realized that I can eat muesli with yoghurt. And I started to look for perfect granola. Not to sweet, preferably without sugar, with my favourite fruits (no banana!) and nuts.
Finally, I grow up enough to make my own granola. But it had to special. So I used buckwheat groats, some dried fruits, orange juiceand beet syrup. And that’s how I made my first buckwehat granola!
Buckwheat granola
for winter
Ingredients:
Dry ingredients:
2 cups rolled oats*
1 cup buckwheat groats (not roasted)
1/4 cup flax seeds
1/2 cup hazelnuts, coarsely chopped
1/2 cup almonds, coarsely chopped
Wet ingredients:
1/4 cup orange juice
3 tbsp sugar beets syrup
1-2 tbsp coconut oil melted (optional)
Spicies:
1 tsp ground vanilla
1 tsp ground cinnamon
Fruits:
1/2 cup dried cranberries
1/2 cup raisins
1/2 cup dried apples, crushed into smaller pieces
*remember to check if your oats are gluten-free
Preheat the oven to 150°C.
Line a baking sheet with parchment paper.Mix toghether all wet ingrients. In a large bowl combine all dry ingredients. Place them on the baking sheet. Drizzle with the wet ingreidient mixture and spices. Place in the oven for 20-25 minutes, stir around a couple of times to keep it from getting burnt.
When the granola is cooled add the dried fruit.Store the granola in a glass jar.
