Pomegranate tabbouleh

After Christmas and New Years Eve, all I can think about is detox. I love Christmas Polish food, its really uplifting, but I also need some refreshing dishes to get back on my feet. I usually drink green smoothies or eat fat-free spring rolls with carrot and apple to get my balance back.
Another dish which I just adore is tabbouleh. It’s perfect detox dish!
This popular Arabic salad is so refreshing and light, that I could eat it everyday, especially when I eat too much fatty food.
The base of this salad is bulgur or more common couscous. But the special thing about it is the dressing, made of refreshing herbs accompanied with lemon juice. The rest ingredients depends on you! They should be fresh and raw!

 

This version of tabbouleh is based on recipe from “Big Vegan”. The pomegranate plays the main role here. I have this issue with this fruit. First it’s very difficult to remove all those juicy seeds from the shell. Next, the taste of pomegranate is really weird  something between sweet and sour, really refreshing. Besides pomegranate, there is fresh shredded carrot and celery. Parsley and mint are the perfect match for dressing.

 

Ingredients:
6-7 servings

250g uncooked couscous
salt
1 clove garlic
½ cup fresh parsley leaves(15g)
½ cup fresh mint (15g)
3 tbsp pomegranate molasses*
1/4 tsp ground cinnamon
1/4 cup (60ml) olive oil
1 cup (110g) shredded carrot
1 cup (120g) minced celery**
1/3 cup roasted pistchios or cashews
seeds from one pomegranate
salt
pepper
lemon juice

* you can use pomegranate sirup or reduced juice
** 2-3 ribs

 

1. Salt couscous slightly and prepare according to the instruction on the box. Set aside to cool down.

2. Mince garlic, parsley and mint. Blend garlic and herbs along with olive oil, cinnamon, molasses, until quite smooth, like dressing.

3. Add shredded carrot and minced celery to the couscous  Pour the dressing and add pomegarante seeds and roasted nuts. Season with salt, pepper and lemon juice (optional). Put in the refrigerator.
