I know that using oven while there’s so hot outside seems to be unreasonable thing to do. When there is almost 40 degrees Celsius we dream about cooling drinks, colorful sorbets rather than baked dishes.
But I’m a real hot weather enthusiast and I’m not afraid of using oven in the summer. Especially to prepare this delicious, refreshing dish. Baked kohlrabi accompanied with classical young potatoes it’s a perfect combination for dinner.
Lemon juice will give this energetic flavour. The last ingredient is thyme, aromatic and healthy herb. Recently, I use thyme in my kitchen almost all the time. It’s prefect for baked seasonal veggies: aubergines, zucchini, potatoes and of course kohlrabi.
I love eating fresh, raw kohlrabi, but sometimes it’s good to make a change. So, I decided to baked it and it was a perfect choice. It’s really aromatic and delicate.
What about nutritional values of kohlrabi? The most nutritive are young, green leaves. They are full of minerals and vitamins. But the root is also valuable. Kohlrabi contains lots of vitamin C, which helps us with iron absorption. It’s also full of potassium, selenium, calcium and magnesium.
This dish is no doubt easy to prepare, delicious and very nutritive, Serve with vegan garlic sauce, soy yoghurt or salad.
Ingredients:
4 servings
700 g young potatoes
2 kohlrabies
2 tbsp olive oil
lemon juice form about ¾ lemon*
2-3 garlic cloves
thyme
salt
* the amount of lemon juice depends on how sour dishes you like
Clean potatoes, but do not remove skins. Diced them evenly. Young potatoes’ skin is not only delicious but also very healthy. Cook them for about 10 minutes.
Peel kohlrabies and dice them, too. Mixed potatoes, kohlrabies, lemon juice, olive oil, whole garlic cloves and thyme. Season with salt.
Bake in 220 degrees C for 30-40 minutes until potatoes and kohlrabies are tender.
