I used to hate oatmeal or any porridge-like dish. I cannot recall the last time I ate it and what was so horrible about it, but even mentioning the oatmeal used to make me fell almost sick.
And the idea of getting at 6:30 a.m. and spend those precious minutes for preparing this gooey thing? Why I would do it to myself?
But thanks to one cold, rainy day and the lack of products, I start to enjoy oatmeal. I prepared it on the soy milk with coconut and peanut butter, very cautiously, trying not to overcook it. And the taste was shocking. Oatmeal came out really good, not gooey at all.
So I decide that from time to time I can prepare the oatmeal for breakfast. It could even be my third favourite breakfast dish, along with a half of avocado with black salt and banana. Maybe it’s time to change those minimalistic breakfast? Plus it’s really comforting to eat something hot in the morning. And what is your opinion about oatmeal?
Coconut peanut butter oatmeal
with cranberries and apples
Ingredients:
2 servings
⅔cup rolled oats*
⅓ cup shredded coconut
2 cups plant milk
1-2 tsp date syrup (optional)**
4 tbsp peanut butter
fresh apples
cranberry jam
* some of rolled oats may contain traces of gluten, so if you are on gulten free diet, rember to buy those without gluten
** or any other sweetener
In a pot mix the oats, cocount, milk and date syrup. Bring to a boil and cook until the oatmels starts getting a little thick. Remove from the heat and add peanut butter. Stir to combine.
Serve with fresh aplles and cranberry jam.
