Perfect guacamole

Guacamole is my favourite, summer dip. Green in colour, fresh lime taste and delicious butter-like texture of avocado. For me this is a definition of hot, summer days.
In the morning I prefer milder version of guacamole, without hot peppers. I woke up and half-asleep I begin to prepare it. I love the sound of spoon going into creamy, butter-like avocado. Intense green colour of lime really wakes me up. And when I’m chopping tomato and onion I’m fully awake. Few seconds for seasoning with pepper, salt and fresh coriander leaves and once again I can dive into sleepy morning.

 

Guacamole is delicate and creamy, but on the other side lime helps me to come back to the reality.
Nothing taste like baquette with a lot of guacamole eaten on sunny, holiday morning, reading book or favourite magazine.
It’s even better than bruschetta. Guacamole has taste of summer, lazy mornings and long sunny days in pyjamas.
And even if guacamole is served on Mexican evenings with friends or barbecue, I will always think of blissful mornings on summer days with this green dip by my side.

 

Ingredients:
about 10 tsp
about 250g

1 ripe avocado (200g)
½ medium red onion  (60g)
½ tomato (70g)
juice from ¼ lime*
1 tsp chopped coriander leaves**
salt, pepper

* you can add more or less, it depends on what you like, you can substitute lime with lemon
** you can add fresh parsley leaves, too

 

Cut avocado lengthwise around the pit. Scoop the avocado flesh using teaspoon. Put the flesh into a bowl and mash it with for until smooth. Add lime jucie.
Cut the part with seeds from tomato and chop finely. Mince red onion. Mixed all the ingredients together. Add coriander leaves. Season with salt and pepper.

You can save the avocado pit and put it into guacamole to stop it from going dark.
If your avocado isn’t ripe enough, put it into paper bag with apple. It really helps!
