Simple tomato soup

The best recipes are those creates by accident. Sometimes empty kitchen shelves are more inspiring than a full pantry.Maybe the lack of options to choose from clears the mind, helps to turn to the simplicity. Minimalism can bring a lot flavor to the kitchen. The pleasure of creating tasty dish from scratch… Wonderful. So I wish you and myself more long weekends with empty fridge or pantry. Simple tomato soup

Ingredients:

1 large onion
2 cloves garlic
1 tbsp grated ginger
about 300g red bell pepper*
2 tbsp olive oil
2 cans tomato
1 cup plant milk (or water or broth)
1 tbsp beetroot molasses or other liquid sweetener**
salt
pepper
red chubritsa
sweet paprika

*I used 2 ramiro peppers
**add less or more depending on the acidity of tomatoe

1.  Chop the onion and garlic. Slice the bell peppers.

2. In a large pot heat the olive oil. Add the onion, ginger and garlic. Cook for 2-3 minutes. Add peppers and cook for another 2-3 minutes. Cover the pot and cook until peppers are soft. Pour a little bit of water if needed.

3. Add the tomatoes, spices and bring to a boil. Remove from the heat add milk (or water or broth). Blend until smooth. Add molasses and more spices if needed. Serve with croutons, rice, noodle or nuts. The choice is quite wide.
